-I set up a connection on Zapier but it doesn't seem to give me the option to have a cancelled subscription due to failed payments as the trigger

And I'm not even sure if setting up a webhook would work?

When I test the Cancelled subscription trigger it doesn't show me any option that says "reason for cancelling" or anything like that

Some way I could tell any given cancellation took place due to missed payments and not for other reasons

Sounds like Zapier doesn't support what you need, so you'll need to use something else or build your own solution (but probably the former if you're not a developer).
