What API Version is listed as your default when you go to https://dashboard.stripe.com/developers?

It should be a date like 2020-08-27

Yep okay so that is likely the issue. Can you provide the full code block you are using? I believe you need to expand the sources property for the customer as we state in our API changelog here: https://stripe.com/docs/upgrades#2020-08-27
