Are you creating the checkout screen yourself by using the Stripe API, or is it SimplyBookMe that is doing this for you?

SimplyBookMe is doing it for me I guess, because I had no configuration to do besides adding the Public/Secret Keys in the Payment Setting on SimpluBookMe
