Hey there! Which doc are you referencing?
My understanding is that will work yes as you're (unadvisedly) using destination charges with standard connected accounts
Have you tried to test it?

you can yes. It's a good question, I don't know the answer. In the current integration, funds from ACH are segregated from the rest of your Stripe balance and I believe never get converted(for regulatory reasons ACH has to be separate from cards, all through the flow from pay-in => connected account => payout)
I don't know if that changes in the new integration(which is basically rewritten from the ground up) and I don't have the capability to quickly test it for you, so I'd suggest either trying it yourself when you have access or writing to our support team so we can investigate
