Ahhh 😦 so I would need to go down the Connect custom account route and that way have full control of the payout system?

You should be able to accomplish this with Express accounts as well - you can switch them to manual payouts and then add logic on your end to decide when to payout

Ah I was thinking this, but wouldn't they be able to pay out at any time from the Stripe Express dashboard?

No, Express accounts can't trigger their own payouts - they only have control over their payout methods

Ohh I think I see. It was a bit confusing because when I was messing around with accounts earlier and I viewed the dashboard as the connect account ("View Dashboard as this account"), I could see options to change the payout schedule, but that doesn't mean the connect accounts themselves can freely adjust the schedule and switch between auto/manual payouts?
Is it only because I'm logged in as the admin?

Yeah, the dashboard you see when you click "View dashboards as this account" is not the same dashboard the express accounts have access to. They have access to a more limited view that wuoldn't allow them to create payouts

Oh that's awesome! Sounds exactly like what I was envisioning in the first place 😅 is there a way I can access that view? I tried creating a completely new account and using that during the Connect onboarding, but it doesn't work when I log into that account, probably because of test mode

You can try creating a login link (https://stripe.com/docs/connect/integrate-express-dashboard#create-login-link) for the express account and then try opening it in a new incognito window so that it doesn't try to log you in to your existing platform account
