Stripe need to charge me for this year 49$ but we have a technik problem with Paypal now and is not possible to be charged from there. Can I pay with another option?

You need to talk to the merchant in this case, I don't think Stripe can help you here, the merchant is the one who would help you to resolve this and give you the options you'd need to pay or change your saved payment info.

I'm not sure, who sent you the email? What is this "WP Full Stripe Pro plan"? Who is "asking you to resolve this ASAP". That's where I would start.
