You can change your support phone number in your Dashboard settings here:
https://dashboard.stripe.com/settings/account
This also includes an option for showing the number of receipts and invoices.

Well also your business name would be shared and the business address if you set that up. It would be best if you had an example but as I said our support team is well-equipped to answer these questions for you: https://support.stripe.com/contact
Most of the information on that settings page is exposed to your customers under various scenarios depending on your settings and integration details.
