you can collect the email yourself in your own form alongside the PaymentElement if you wish

you can pass the value of your input to billing_details.email at https://stripe.com/docs/js/payment_intents/confirm_payment#confirm_payment_intent-options-confirmParams-payment_method_data-billing_details and it will be saved with the Stripe API objects created for future reporting
