January 1st, you charge $100. The funds stay pending during a certain number of days. In the US it's 2 days, in France it's 7. So in the US your Payout for that charge is on Jan 3rd, in France it's Jan 8
and that goes on a rolling basis, so charges on Jan 2nd are paid out on Jan 4, charges on Jan 3rd on Jan 5, etc. So you get payouts daily for funds collected X days ago. And X depends on your country
