There was mention that Stripe supports these payment methods but nothing explicit.

I don't think it's well covered in our docs - but setup intents + digital wallets is definitely possible

As a quick thing, you can see in our "Set up future payments" docs that use Setup Intent we talk about Google/Apple pay very briefly (https://stripe.com/docs/payments/save-and-reuse#apple-pay-and-google-pay)
