The way I read this is, that the customer has no option of choosing, which bank account to use for payment. That confuses me a little since as a customer I would like to be able to choose

as far as I know(which is not a lot, I've never used Plaid directly) yes, the Plaid Link interface doesn't let them choose which account specifically is to be used. You could in theory try to build your own UI to let them pick one from that array but I don't know what information you get from Plaid in terms of what you can show the customer in the UI. Presumably there's a reason we suggest doing it this way instead.
