I think it would be nice to have an extra "textarea" field below the input field here, so you can add some additional information regarding the item itself. And then of course it would be nice to have some formatting options like [ul] / [ol] and things like bold [b] etc.

ah gotcha, recommend writing to https://support.stripe.com/contact with your screenshots and specifying that you're requesting a Feature Request for the Invoice editor
