This is indeed possible and sounds very much like the Separate Charge and Transfer workflow. What about the description there does not match with your expectations?

The 2.5% charge to the seller and the buyer on the portion that is just the item and not the delivery charge.

The Stripe fees are assessed on the Platform account per this funds flow diagram: https://stripe.com/docs/connect/charges-transfers#collecting-fees
If you wish to shift these charges somewhere else you can adjust the amounts transferred to the accounts rendering the goods or services.
