unfortunately no, Checkout does not create Invoices for one time payments, it just does the payment directly, it only interacts with Invoices for subscription purposes

it's common feedback that it would be useful if Checkout used one-off Invoices for its mode:payment , but it doesn't today

as for workarounds, not really! If you absolutely want an Invoice you can create one directly, then use the hosted invoice page(https://stripe.com/docs/invoicing/hosted) to complete the payment, but then you are not using Checkout at all, and it's a different integration entirely and a bit more primitive
