Mostly payment plans are going to depend on region. If you are Mexico-based, then we have the option of installments: https://stripe.com/docs/payments/installments. There is also Afterpay/Clearpay: https://stripe.com/docs/payments/afterpay-clearpay as well as Klarna: https://stripe.com/docs/payments/klarna.
Another option, although not as clean, is to create a subscription and set it to cancel after n number of months, dividing the price of the product over those n months
Another thing to note with that last option (Subscription) is there is also financial risk to it as you, the merchant, don't get all the money up-front. There is a chance a user's monthly payments don't go through down the line
