remove automatic_tax: enabled and you should see GPay and Apple Pay

Since I haven't regisered any VAT at the moment, will taxation be still done or not?

(until now whoever has paid, their payments didn't get taxed under the reason of being not eligible for taxation)

Tax should not be applied if you haven't registered for VAT via your Dashboard.
