On the page itself are you using our Payment Request button or Payment Element?
Do you see any errors in the console?
If the button shows up on the stripe doc page, it sounds like the page is slightly misconfigured but it is hard to say how at the moment.

works fine for me, the button appears as expected!
so if it doesn't for you it's usually because you don't have google pay configured on your laptop/phone

I don't really know, that's more a Google question. I just have an Android phone and a Google account, but you can add cards at chrome://settings/payments?search=payment in Chrome for example and it needs to be via Google Pay

personally I just added a card to https://pay.google.com/ and then it's associated with my Chrome profile and appears on my phone and my laptop
