Gotcha - so you're wondering if there's a way to limit the billing address country when paying for a subscription through Checkout. Unfortunately, I don't believe there's a way to have this level of customization in Checkout

that seemed to be case from when I seearched and read results, but I thought I'd ask directly in case anything had changed
so what do people do - verify that Checkout data when it comes back and reject it?

Sorry completely missed this follow-up. Typically most users who are on Checkout don't need that level of customization, and user's that do need this would create their own UI to have greater control. If your goal is to limit this to users who's billing addresses are in a specific country, you can look into using Radar rules (https://stripe.com/docs/radar/rules/reference) for billing_address_country to limit which countries you accept payments for
