@autumn wasp I think you want to reach out to our support team at https://support.stripe.com/email, I believe there's some manual re-onboarding of your account we might have to do to with the payment method.
I'd suggest writing in with full context and screenshots of the bank statements etc where you're seeing the old name so we can help
