Sorry for the delay, I think I found the issue.
When the invoice related to the paymentintent you shared was created, the customer had not yet a default payment method.
So that's why the payment intent doesn't have a payment method.
To avoid having this issue, you need to set the default payment method of the customer earlier.

And this customer does not have a default payment method at all and still it works
They have a payment method, it's just not set to default
It was actually met setting the first customers payment method to default as a test just now.
