Hey there, i was going to mention crossborder issues but you say you'll be creating an FR platform account so that shouldn't be a concern then.
Glad you found the account token info, as that can be a bit surprising for folks who haven't operated in FR before.
I don't expect there should be any differences while you're working inside a single country though, no. Most issues arise with country/region border limitations, or restrictions specific to a given region (eg, India).

Correct, we plan on using our US platform to facilitate the movement of funds for any connected accounts based in the US and plan to use our FR platform to facilitate to the movement of funds for any connected account based in the Schengen area.
Is the Stripe Hosted Onboarding form supported for French Platforms? And if so, will the "account token" be automatically handled if we use the hosted onboarding form?
Otherwise, could you please share additional info/documentation on what we will need to do for the "account token"? Thanks!
Yes, connect onboarding is a significant simplification, especially for FR - i'd strongly recommend it

Yes thats right, the onboarding platform handles the token aspect for you, the account tokens are only relevant if you're building a custom onboarding flow for collecting account info (you may still use it to collect a few pieces of information to seed the account before redirecting, like an email etc)
