the fee as i understand is a % so in theory it shouldnt matter if its one charge vs multiple?
but also would stripe 'do/act' like i suggested? ie get suspicious about multiple charges / one big charge?

You should review your exact applicable fees but many include a flat amount + a percentage taken together, so you'd be incurring the flat amount multiple times with multiple payments

thanks. but you havent answered my q about suspicious behaviour if i lump it into one.. would a higher amount have a higher chances of getting declined

i suppose the other thing to note that the CARD issuers itself might view me as dodgy if its high.. which i understand u cant do anything about

I can't really say, it depends. There is also the consideration that with multiple paymetns the bank might choose to authorize/decline each one individually, and you might prefer to have the full payment declined rather than part of it. As @mortal lantern mentioned, this is mostly a decision that's up to your business needs.
