The discounts on Subscription is for discounts still active for future invoices, like a promotion for 3 months. If your promotion code is for a one time use coupon then it wouldn't be set on the subscription

Also, what is the best approach to display an order summary to a customer, should I use the lines object in the latest_invoice for that?

yes that's what I'd do. That and all the other relevant properties on the Invoice object
