@rugged tree you can't really, unless you just wait to do the final payment until you know the final total amount.
otherwise the usual way to do it would be to authorise the base amount, and then do a separate authorisation later for the additional amounts.

So if I reserve $100 on the users card, I can update that to $200 as long as the user authorizes?
Or do I have to cancel the existing paymentintent
that has reserved funds already

no you can't update the existing authorisation, you can only do a new one

I mean to be clear we totally support holding amount (https://stripe.com/docs/payments/capture-later) , but you can't increase the amount of the held amount without doing a separate authorisation payment
but I know certain classes of merchant(like fuel pumps and restaurants) can do that and we have option for businesses in those areas
