This sounds like a great use case for subscription schedules, you can effectively have the pricing and duration hop around however you see fit, though you should make sure to set clear expectations with your customer for when to expect payments and for how much:

I had a look over schedules earlier- sounds good, thanks for the help! To offer a bit more context, the 'customers' would be the ones creating the subscriptions. Is it possible with schedules to predetermine the pricing and duration of each billing period, for example before the start of the subscription?

I'm not sure what you mean, can you explain some more, perhaps with an example to illustrate the ux/flow you want?
Generally: you as the merchant/developer need to configure the schedule. If you want to present a UI for your customers to choose some parameters here, thats fine, but you need to map that to the phases in the schedule API
