you could use the send_invoice method but disable our automatic mails(on https://dashboard.stripe.com/settings/billing/automatic)

I think that accomplishes what you're looking for!

I don't see that option in our account. I only see the "Send reminders if..." option below.

Oh sorry, was looking at the wrong heading. That toggle is actually already off for us! I'll have a go at finalising an invoice again and see if the email doesn't get sent.
