With separate charges and transfers, the money would go to your platform, you then choose how much money to send to each of the other accounts involved with the transaction
Which also means you get to choose how much to keep on your platform, which is essentially your fee

That's more up to you to decide depending on your needs. separate charges and transfers can be done with any account type

What about invoice?
My platform need to send invoice to every food producer involved in the costumer order
And every food producer (connected account) need to send invoice to the costumer (for their part of the order)
Is it possible someway?

I am not immediately aware of what there is to send/show your food producers. Looking in to it...
There isn't anything built-in for showing your connected accounts how much you kept in fees and whatnot.
