We had previously discussed with Stripe rep with white labelling the payments approach which was all fine. So it's just whether it's possible to change Stripe to something else?

Gotcha - so I don't believe that there's any publicly documented way of changing that. I'd suggest you follow-up with the Stripe rep you were already speaking to and checking with them
