I don't remember anything like that ever being available on Invoices - at a minimum, you'd need at least two calls (one to create an invoice item, and one to create the invoice) and the finalization doesn't necessarily need an additional call if auto advancement is enabled

... is there a way to "batch" requests, though? Or would I need to create an Invoice Item each with a request by itself?

Unfortunately not - you'd need to make a request for each invoice item you want to create
