no, this is not configurable -- the custom fields appear with the customer information, IIRC

You can optionally put information in the memo instead, or generate your own invoice PDFs from the Stripe invoice object

Ok, but on my invoice those fields not appear on customer side (at least where Bill to statement is). nevertheless, If we add some metadata to users, can we display them somehow on the invoice too? and where?

And also - is it possible to set memo during subscription creation so it would be on an invoice for that subscription?

Not on the first invoice, no, but on subsequent invoices you can update the invoice while it is in draft for 1hr by listening for invoice.created webhooks.
