Hey there, what kind of accounts do you use?
For the payment method types which support manual capture, you can update the application fee with the capture request
But not all payment method types support this flow (manual capture)
If you use express/custom accounts, an alternative would be debiting your fees from those accounts after the payment:

thanks! we use a mix of standard and express (working towards migrating old accounts to express but won't happen for a while). We also use some PM types that don't support manual capture.
We also have customers using a wide variety of currencies/countries 😬
Another alternative would be setting the fee high enough to cover any possible payment, and optionally transferring a rebate of that to lower it
