I've thought about generating a coupon code and applying it during the checkout session creation, but that doesn't cover renewals, and could get very messy if the user abandons checkout.
Hello! What you're describing isn't really possible. As you found the Customer balance only applies to Invoices, and Stripe generally discourages you from moving credit/stored value around between Customers the way you're describing.
That's unfortunate, it seems the use-case for customer balances is incredibly limited then. Any suggestions for other approaches to what are effectively Gift Cards then? (Ideally not using a 3rd party service)
Stripe does not allow gift cards/stored value. See the third item in the table here: https://stripe.com/restricted-businesses

Quick follow up question. Gift Up! is listed as a Stripe Partner. How are they able to sell gift cards via Stripe?
