@lean storm we're working on a ShippingRate API in Checkout, it's even shipping publicly soon. Have you looked at it? https://stripe.com/docs/payments/checkout/shipping?

overall though it's impossible to "modify/update" the list of line items on a Checkout Session. Only solution is to create a new one otherwise
