We've identified a bug with Google Pay's shipping options, which is why I was asking. When a new shipping option is selected in Google Pay it looks as if the selection didn't change even though it did (the line items and total are updated). We're investigating this now and hope to have it fixed soon, but there is no issue with Apple Pay.

or actually I can't because Apple Pay requires a live Stripe Connect account

Which I'm not using for test purposes at the moment

But yeah I have that bug with GPay. To clarify, the expected behavior is that when the customer changes shipping option, the newly selected option should appear as the default selection, with its little bubble filled in?

Yep, that's the bug we've identified and are working on fixing now.
