Do you mean ApplePay on web or app? You would need to register a real card into ApplePay wallet to test with Stripe. If you are using a Test Key you won't be charged, so don't worry about actually being charged

Do you want to test the exact case that your customer want to use UnionPay Card inside Apple Pay, or you just want to test Apple Pay?
