hello! not sure, numerous factors involved. Like how familiar you are with Stripe, how much of a "power user" you are of the API, etc
so don't have a clean easy answer
also depends on if you use Custom with your own UI fields or use Stripe hosted onboarding

It's new to me. I'm aware that on our side we'd need to look at adding either the stripe hosted onboarding or our own UI. My question really is how easily can I change all account types to custom from express once I have designed and deployed our own dashboard etc? Not sure how often this is done.

you cannot, there is no "migration" of accounts

if you onboard me as an Express account, and tomm want to make me a Custom account, you need to re-onboard me as a Custom account entirely
