@spare quail could you elaborate a little bit more to help me understand exactly what you're looking for?

For example if I start a subscription today, what should I pay, and when should my next payment be and for how much?

If you subscribe today and after 1 month you doesn't pay the bill (credit card issue or enough balance) you stay in grace period for 7 days and after that more 1 month with unpaid status, in this period you can pay the bill, if you not paid after the grace and unpaid perion your subscription will canceled

that would just be a normal subscription on Stripe, and you can set up the grace period by setting the configuration of your retry settings for recurring payments — see https://stripe.com/docs/invoicing/automatic-collection which talks about this in detail.
