This depends on exactly how the old and new platform manage your data and if you'll be connecting an existing stripe account to a new platform vs create a new account with them.

It'll be the same stripe account, so basically just "rehooking up" to the payments they already are making. Any idea of any documentation on that or what search terms I might want to use while waiting for support to respond?

Yep, if your account has the customers/subscriptions you might not need any help from the platforms, but effectively you'll be "disconnecting" or "deauthorizing" the existing platform, and connecting to a new one, if supported. It depends on your account configuration, as i mentioned.
