It could be many many different things. Did you go through https://stripe.com/docs/stripe-js/elements/payment-request-button?html-or-react=html#html-js-testing which covers how to debug things?

Does the apple pay button show for you at the top of that docs page @vapid slate , can you click it to get the apple pay payment sheet?

You need to have a card set up in your apple pay wallet for the button to appear
