We use virtuous and stripe.
Our donors are signing up to give monthly recurring donations.
The payments are not coming through because we have not verified their bank account.

After we obtain the verification documents where do we upload them to? or is it just a checkbox?
the integration you are using, did you build it? or is it a form of plugin that you are using?
It is a giving form already set up by virtuous.

what error message do you see on the Dashboard?
full disclosure, the right answer here might involve working with virtuous as they have built the integration and it isn't in your control but just asking
you would have to talk to Virtuous then
beucase their form is creating the payments, or supposed to
Stripe just does what a plugin asks it to, so Stripe's API will create a payment if asked to, I assume something is off on Virtuous's side or their form that isn't causing the payment to come through
