Stripe doesn't send these emails automatically in test mode (see https://stripe.com/docs/invoicing/integration#create-invoice-code and https://stripe.com/docs/api/invoices/send)

The only way to send these emails in test mode is by pressing the "send invoice" button in the dashboard

Or be creating the invoice in the dashbaord in the first place (and having it send to your own email)

sorry to butt into this answer but since Stripe doesn't send emails in test mode that makes it all more weird that we started getting errors "our account has exceeded the number of emails you can send to someemail@abc.com for the day. Try again in a few minutes." when sending a "send" event in test
