It was made through Apple Pay which is why I’m confused on why they said Stripe could route my money to my new card

Usually for refund questions you would talk to the merchant issuing the refund for questions and issues.

Oh, I see. Yeah, that doesn't quite make sense. First, you shouldn't have to contact Stripe, the merchant would contact us directly. Second, if your card was automatically updated in Stripe the refund should automatically route to it and succeed, but not all cards are automatically updated, so the refund might fail. If the refund fails the merchant will be notified and is required to make other arrangements.
In short, it's possible for a refund through Stripe to an expired card to succeed, but it's something the merchant and Stripe handle on their end. You, the customer, should never need to contact Stripe; the merchant should handle all of this for you and be your sole point of contact.
