The email address not being saved is unfortunately a limitation of the current way that testmode is implemented on Express accounts and is expected behaviour.
We display this limitation on the Update Settings page of the express dashboard ("These values are not persisted for accounts in test mode."), but I definitely see how this could be confusing as that text doesn't appear on any of the pages that you viewed.
