Unfortunately, there isn't a way to enable/activate Stripe Tax today. This requires a lot of local information about the business itself and where they are registered/filing taxes. You will have to ask them to enable tax manually for now

Okay. Thank you for the clarification. Just for understanding, we can still add Products & Price, and use StripeCheckout in this case? Only tax would not be calculated automatically

correct, if you want to enable automatic tax calculation they first have to enable this in the UI themselves (but you can't know)

The only way is to keep sending them some reminder mails I guess. Thank you for clarifying.
