Well, ot has to do with the settings in Stripe dashboard. That I know because this is were webhooks are fixed, and this is what we have changed

yes but you don't write the code that receives the webhook, parses the JSON and writes to a database for instance, yes? That's what the plugin does and its developers would be best suited to understand/explain what you see.
