yeah that's a good question

I think you have to call the API to do it — get the src_xxx ID of the Customer's ACH Credit Source from their dashboard page, and then update its email field to be amount_{CUSTOM_AMOUNT}@example.com , like the second example at https://stripe.com/docs/sources/ach-credit-transfer#testing-ach-credit-transfer-payments
