That could work, it really depends on what you're trying to achieve and how you'll manage payments for those accounts. Are you running the back end for the payments? For a plugin approach you should review here:

Since our clients sites are also going to be on wordpress, it will be using woocommerce for the payments, with stripe.
Is there another way then using a plugin?

This may not be possible if you depend on another plugin, but i don't know whether that supports your use case
