most of our users request us to port over both customer data and payment methods, so i'm not too sure if it's possible to only port over the customer

there is no payment info stored in invoice ninja. also another question is it possible to send an invoice to a phone through text?

hmmm, Stripe has hosted invoices and we have a url for that, if you send a text with that url, then yes. But you would need to handle the texting portion yourself since that isn't a feature we currently offer
