Unfortunately it does not look like that is possible now, it is only possible to pre-fill some customer info or their email

#

Though if you already have their shipping address, you can associate it with the Customer and use it when the customer creates the Checkout Session

Basically I've a form which is need to be filled from my site by customer, and this details I need to pass to stripe checkout session

Unfortunately like I said that feature is not currently there. I can raise feedback about it internally to request this

Is there a reason it needs to be filled in in Checkout specifically?

Yes... customer doesn't need to fill the data twice

If you don't include shipping_address_collection, Checkout won't collect the info, so you can just use the info you collected on your site for fulfillment
