I can help if you're building a Stripe integration by writing code to integrate with Stripe's APIs

But this looks like a sort of no/low-code plugin and I'm not sure how much code you need to write to further customize it

I'd recommend reaching out to their support forums or their support team (refersion's i.e.)

so the Coupon Code was redeemed once

there was a PromotionCode created off the CouponCode, that was not redeemed (from my read of that page)

PromotionCode is just an abstraction over CouponCode.
CouponCode is applied by the merchant/user (not customer)

PromotionCode is a customer facing code that you can give to your customer like holiday2021 and they can apply that to Stripe Checkout to get the discount.

Sorry, there's a lot here and I'm speaking from a developer integration standpoint, cause this channel is a developer community forum.
